Seasonings and spices
The accompanying flavors of many rhea dishes - berries, mushrooms, root vegetables and herbs greatly enhance the natural taste and complexity of the rhea meat itself. Rhea meat is very mild and takes on any flavor you pair with it.
These additional flavor layers offer greater opportunities to marry the dish with the subtle nuances of a fine wine. For example, rhea with a currant or cherry based sauce will reflect the currant-cherry flavors found in Pinot Noir.
Using flavors that either contrast with or match one another is one of the easiest ways to accomplish a successful partnership on the table, but there are many others. These have to do with the compatibility of flavors, the balance of textures, and the harnessing of the basic components of taste found in both rhea and wine.
Storage
Fresh vacuum packaged rhea meat may be stored safely at refrigerated temperatures for up to fourteen days. |
